T left bright and early this morning for his first business trip with his new job. He took a new job about a month ago and I couldn't be more proud of him! He will be traveling more with this job, but they will be short trips. His previous job also included travel, but it lasted 6-7 weeks! He left this morning and will be getting home Friday night, but I won't actually see him until Saturday evening, because I'll be at a conference with my job Friday-Saturday.

I went ahead and headed to my office after dropping him off, but got there an hour early. But....being the planner that I am, I'd thrown a pair of walking shoes into my car before I'd left the house. I missed my workout this morning because we had to leave so early for the airport, so I decided I'd go walking on the Riverwalk for some exercise instead. I laced up my walking shoes with my gray dress slacks, black sweater and red pea coat and headed out, because I can totally rock that outfit! Oh, and don't forget the pearl stud earrings. Man, I looked good!
It was a beautiful and crisp walk along the river this morning.
I actually really enjoyed my walk. I saw tons of ducks and these pretty white birds, that I have no idea what they were. I normally walk along the river during my lunch break, but this morning I had more time, so I got to explore areas that I've never seen before. I got a total of 2.3 miles in 41 minutes. Not too shabby for a morning stroll.
Oh, and on another note....Molly and I really miss T when he's away, but Molly's not too upset that she gets to sleep in his spot on the bed while he's gone.

Sunrise to Sunset, with lots of caffeine in between
The hubs and I had a lot of fun planned today. We've been talking for what seems like forever about taking a Saturday morning to drive around and garage sale shop. T loves to garage sale shop! I found out, from a co-worker, about a huge community-wide garage sale in her area this weekend. I came home, told T, and even though it was on the other side of town, he was sold!
We got up bright and early this morning, at our normal weekday time, which I wasn't completely excited about. I'm definitely a morning person, but by the time Saturday morning rolls around, I'm looking forward to maybe sleeping until 5:30 or so. But, the hubs was super excited, so I dragged myself out of bed at 4:30 to get my workout on.
We left about 7:15, and this required lots of coffee!
Before we'd even arrived at our destination I informed the hubby that as a result of my massive intake of coffee I would require a potty break. One thing I love about the T is that he doesn't just make a quick stop at a gas station for potty breaks. He likes to go to grocery stores or super centers. So, we stopped at HEB Plus. I was baffled by this sight. Pumpkins and Christmas trees. It's the perfect combination....right....??
Back on the road, happy husband....loves his garage sales.
Best buy of the day: this gorgeous accent chair that the hubby not only negotiated down to a great price of $20, but also managed to fit into the backseat of our Ford Focus! Great job T!
After a few hours of shopping we headed out for lunch at a great place, Two Step Cafe and Cantina. This was our second time there, and I think we've decided it's definitely one of our new favorite places in town. Every single morsel of food is amazing. T and I stick to a pretty strict diet regiment during the week, but we allow ourselves one cheat meal, and this was definitely an awesome cheat meal!
For starters, I had their El Jefe Margarita, voted one of SA's best Margaritas
We shared the Texas Rolls, which are kinda like an egg roll, with chicken and sausage
For my lunch, I had the fried catfish, served with hush puppies and borracho beans. Delicious!

This evening, T had a family photo shoot scheduled downtown. I tagged along to help him. (T does photography on the side. I promise I'll do a more extensive post about this in the near future).

The way to a man's heart
You know how they say that the way to a man's heart is through his stomach.
So, back in the day when T and I first started dating, of course we had our first few dates in public places. I had to make sure he wasn't a serial murderer or a past car stealer. Funny story there. T actually told me when we first met that when he was younger he used to steal cars. I thought maybe he'd had some kind of troubled teenage past, and he actually had me going for a few weeks. Needless to say, he was a perfect angel child and never did so much as run a stoplight. I still have no idea how he came up with that story or why he felt the need to try and impress me with it. Goofy boy.
But where was I? Focus Megan Focus!
Anyways, the first time I invited T over to my apartment for dinner I cooked Taco Pie. It was delicious, but probably one of my easiest go-to recipes. But hey, he didn't need to know that I didn't slave over a hot stove for 6 hours!
This dinner won him over! Ok, maybe not completely...we'd only been dating a few weeks after all, but this dinner proved I got cook, so he stayed interested.
This is probably still one of his favorite things that I cook, and he pouts when I haven't cooked it in awhile. He was getting kinda whiny about it the other day, so I figured I better pencil a few hours into my schedule to make this meal. Ok, I kid people. My hubby's not whiny....and this meal takes less than 30 minutes or so to whip up. You've got to give it a shot. You will not be disappointed.
First, you want to brown 1 pound of hamburger meat. Once it's browned, mix a packet of taco seasoning, a cup of corn and a can of rotel into the skillet. Don't add the water that the taco seasoning packet says to, but you may want to add just a bit to help mix everything up. Maybe just 1/4 cup or so. Don't be afraid. You can't mess this up. Let all that niceness heat up just a tad. This is what it will look like.
Next, mix up a batch of corn bread mix. I use Jiffy. Mix it according to the package's directions. Once that's all nice and mixed up, pour your meat mixture into a greased casserole dish. A little square or rectangle one works nicely. Next, pour your cornbread batter over the meat mixture and try to kinda smooth it out. It'll look like this.
Now you're ready to pop that baby in the oven. Bake it at the temperature that the Jiffy box says, for the time that it says. I'd type it all nicely for you here, but I goofed and accidentally threw the box away, and I don't have another one in the pantry. Forgive me? :-(
It's ready when the top is nice and golden, just like cornbread normally should look.
This people, is deliciousness! Pair it with a nice tossed salad and you've got yourself a balanced, wonderful meal.
